Bone broth seems to be the kombucha of this year. It's sold in good grocery stores, recipes on how to make your own are swapped at Crossfit gyms, and oh-so-sustainable and paleo-friendly restaurants are serving it as a hot beverage alongside tea and coffee. But why?
Simply put, bone broth is one pretty-darn good food. It won't replace all of the nutritious food you eat, but it is a wonderful complement to your healthy routine. Full of healing and bone building nutrients and a good punch of gelatin for connective tissue, you can't get much better than just having a nice piece of liver. Ok, sorry, didn't mean to bring up bad memories.

So why the hype? This liquid—which you could say just seems like soup without all the good stuff—is it really worth the fuss? In short, the answer is heck yeah. The reason is in the preparation and the magic of science. Take some meaty bones of any animal (in this case, grass-fed beef), complete with their protective cartilage and other attachments, and simmer it for hours and hours with a few aromatics. Over that time, amazing things happen. All of those attachments break down, slowly, and they add some amazing nutrients to the liquid: collagen turns into gelatin, proline, glycine, arginine, and glutamine amino acids join the party, and glucosamine and chrondroitin are present and ready to help you heal.
Not to mention, there are some serious minerals all ready to absorb: calcium, magnesium, potassium, and phosphorus. They slowly get incorporated into the broth over many, many hours (this is why beef bone broth needs about 24 hours to be fully ready and the most nutritious) from the bones themselves. Adding just a touch of acid, usually vinegar, to the broth, helps to draw out those minerals while simmering.
