It's well established by now—at least in the last few years, anyway—that coconut is pretty darn good for you. Thankfully the days are over when coconut's saturated fat was vilified and held in contempt by those who thought that all solid fats were about the worst thing you could put in your body. The first time I tried it I was, let's say, skeptical, in the same way that I am skeptical of any food that tries to be something that it is not. Jerky? That's made out of meat! Now, I love coconut, but it ain't jerky. Unless, you and me and everyone widens our perspective just a little to accept that dehydrated spiced young coconut MEAT is freaking delicious. Because it is.
When I ate this flavor, this gingery delight of umami, I didn't exactly swear off real jerky, but I was able to admit that you can "jerkify" a whole lot of things, as long as the thing you start with is real and delicious. Coconut? Delicious. Therefore, perfect for seasoning and slowly drying to strips of golden joy.
The flavors are spot on: the coconut aminos (a soy-free alternative to traditional soy sauce) add a huge punch of umami—that flavor that gives meat its meatiness. Then the warming ginger, and a punch of tart from apple cider vinegar. We really love that this isn't overly sweet like most Teriyaki flavored things since the only sugar comes from adding coconut nectar. Ginger Teriyaki is a fabulous way to get your snack on, with far more satisfaction than actual jerky from actual animals. Yes, for real. Why is that? Well, jerky is actually low in fat, and coconut has a good dose of healthy fats to sate your appetite and leave you happy and calm. I'm in love with a vegan product. Shhhhhhhhh!

Darn near. The jerky is dehydrated at 115°F, which is the commonly accepted max temperature for raw foods. All ingredients that are available in a raw form are used, but at this time there are no commercially available raw versions of the following (and as such these items are not raw, but make up only a small portion of the product): Lime Juice, Coconut Aminos, Coconut Nectar
