One slowly melting bite is all it took for me to realize that I was probably going to be eating a LOT of chocolate today. Not like that's a bad thing, especially when the rest of the day had its share of stressors and ups and downs. I tasted the spices, the potent raw cacao and the mellow coconut sugar. I eat a fair amount of chocolate and eating BOTANICAL chocolate compared to the usual is like a ripe aged Parmesan compared to whole milk. Like "bulletproof" coffee compared to straight up black.

Yes CaCao sources beans with a team of over 450 wild harvesters throughout Ecuador, in a truly unique system that benefits the soil, the cacao trees, the ecosystem, the workers... all the way to you, goodness through and through. This wild variety is call Arriba Criollo, regionally specific to the Ecuadorian Andes, and known for its exceptional flavor. Our preference for wild cacao stems from our trust in the knowledge of nature. The true aim of organic and biodynamic methods are to emulate the wisdom of the wild. Wild cacao means there are no farms and no plantations. All our beans are sourced from seed propagated trees, thriving in diverse ecosystems, fed by rain and spring water. Supporting this cacao preserves and protects the heirloom varieties we wish to share with our next seven generations and beyond.
Liberate your mind from your day. GABA is an amino acid naturally produced by our brains, to balance melatonin and serotonin. Through restful sleep, meditation, and other practices that calm the nervous system, we replenish our natural GABA levels. Kava is a crop grown in the South Pacific. Traditionally, its roots were chewed fresh (with the resultant liquid often spit into communal bowls), pounded to release the moisture, or sun-dried, ground, and steeped in water to make an intoxicating, relaxing mild sedative. Nowadays, the active kavalactones are also extracted and pressed into capsules, or added to foods just like this chocolate bar.
First, just to clarify, “raw” chocolate has actually been fermented, which is a very good thing nutritionally. Fermentation makes foods a lot more digestible, activating compounds that you want to be eating, and neutralizing those you don’t. So all so-called raw chocolate is actually fermented. No, it doesn’t have a funky taste like kimchi or sauerkraut, but you can definitely taste a tangy tannic quality in good dark chocolate, not dissimilar from wine.
The benefits of raw chocolate (compared to cooked) include: much higher levels of antioxidants (oligomeric procynanidins, resveratrol, and the polyphenols catechin and epicatechin) as well as the preservation of vitamin C, phenethylamine (PEA, the feel-good neurotransmitter responsible for the feeling of love), omega 6 fatty acids (which when heated become rancid and cause inflammation), tryptophan (a commonly deficient amino acid in those who consume a diet of mostly cooked food) and serotonin (a neurotransmitter that makes us feel goooood.)
For thousands of years sugarcane was considered a medicinal plant. What? Sugar? Medicinal? Yes. Sugarcane (Saccharum officinarum) is in the grass family of plants, and is very proficient in mineral absorption from the soil. When sugar is commodified and grown in large plantations, the nutrition of the soil is depleted quickly and the sugar cane becomes "hollow", only containing artificial fertilizer "minerals". They source their Sundried Cane Juice Crystals in Ecuador, with producers that champion non-plantation styles of farming. This allows the highly mineralized volcanic soil to allocate nutritional density into each sugarcane stalk. Once the sugar is harvested, the canestalks are juiced in a press, then sundried until crystalized to preserve enzyme activity. One word of caution: Kava Kava should not be taken daily, as it is a stressor on the liver. Have a bar once or twice a week and take breaks, and all will be well and mellow as you wish.
