I adore macaroons, oh my gosh I do. I’ve always loved macaroons, and I’ll probably always love them. Yeah, I know that’s not a very paleo or even primal thing to say, but I grew up in a standard American household eating a standard American diet where sweet treats were put on a pedestal. Infrequently offered, constantly craved. But the sweets we had were not very good in terms of health and nutrition. It’s too bad there were no Rickaroons then!
Even in our modern and pretty informed lives, we still crave treats. And the more we try to resist, the more they rear their sweet heads, beckoning to us from bakery shelves, appearing on massive platters, showing up at conference room gatherings of all sorts. It’s hard to avoid modern dessert platters. That’s why Rickaroons are here. Dig in and enjoy the tender sweetness and satiating chew of coconut in each bar. It doesn’t escape my notice that they are shaped like cookies…. Yum.
Rickaroons—especially this lip-smacking MEGAROON flavor studded with cacao nibs—absolutely hold their own next to any non-healthy sugary treat you might encounter. Yes, they’re actually a healthy thing to put in your body. You might be skeptical, because there are some pretty sad macaroons out there pretending to be healthy or tasty or both. I know the good and healthy from the ones that are trying too hard. Rickaroons are not a compromise. They’re just all-out delicious.
Using only a few non-GMO and organic ingredients, Grant LeBeau and his dad Rick have developed an incredible range of Rickaroon flavors, all based on a core recipe of unsweetened coconut, almond butter, coconut palm nectar, coconut oil, and vanilla extract. All of the varieties are so pure and perfectly layered that it’s impossible to say which is my favorite, but Megaroon is the one to choose for crunch. It adds deep crunchy nibs — nature’s chocolate chips — to the mix as well as chia seeds for even more texture.
While the flavors are sublime, it is the light yet chewy texture that makes them amazing. As every cookie aficionado knows, texture is all-important. They’re not too dense and not too crumble-light — they’re just the perfect tender consistency. They’re so filling and rich, one Rickaroon will satisfy your body and soul deeply. Yes, it’s possible to be happy and healthy all at once. You just need to know where to look.
Why are Rickaroons so good for you?
Made with all non-GMO organic ingredients, masterfully sourced, totally gluten-free, these are nutritionally impeccable. Here’s what’s going on inside:
Coconut has been used by many cultures worldwide for thousands of years and is well known for its many amazing properties. Coconut is so nutritious, its list of benefits reads like a patent medicine bottle. It’s full of health-boosting lauric acid and medium-chain triglycerides, has antimicrobial and anti-viral qualities, and has been shown to help with weight loss, Alzheimer’s, cognitive function and athletic performance. It nourishes the thyroid, helps prevent candida overgrowth, boosts the metabolism, and makes skin and hair softer. Many people eat several tablespoons of coconut oil daily, for the incredible host of benefits it confers. Also, it’s one of the tastiest things a person could eat. (No offense, sea veggies.)
Cacao powder is made by low-temperature grinding the raw cacao bean. It’s chock-full of health-giving and beautifying fatty acids and minerals, as well as antioxidants, and nutrients that support mood and the immune system. Cacao is one of the most powerful known superfoods and had been used for thousands of years to boost health and energy levels. Raw cacao is one of the most phytochemically complex foods on Earth. Many of its constituents have yet to even be discovered! We could write a dissertation on the health benefits of raw cacao, but here are just a few compounds found in raw cacao beans,: neurotransmitter anandamide (the "bliss" chemical), neurotransmitter phenethylamine (also known as PEA, the "love molecule"), neurotransmitter serotonin (a brain chemical that acts to shield against stress, increasing ones sense of wellbeing) neurotransmitter dopamine (increases ones sense of pleasure and elevates the mood), phytochemical coumarin (suppresses appetite, and also has anti-tumor properties and helps with blood circulation) enzyme asparaginase (a special enzyme with anti-cancer properties) ergosterol (a necessary chemical for Vitamin D assimilation), sitosterol (helps maintain healthy cholesterol levels), and magnesium (helps combat osteoporosis and weak bones/teeth, heart disease, migraines, muscle spasms, painful menstrual periods, and even diabetes.)
Almonds are naturally delicious and extremely nourishing. Healthy fats, fiber, antioxidants, calcium, zinc, selenium, copper, magnesium, manganese, tryptophan and vitamin E are just a handful of the key nutrients that make almonds so nutritious. Almonds are so nutritious — their list of benefits reads like a patent medicine bottle. They’re full of health-giving fats, like oleic acid and linoleic acid, powerful antioxidants that can protect against many forms of cancer (oleic acid can protect women against breast cancer specifically), and can also significantly lower the amount of LDL in your blood, and reduce your risk for heart disease. Almonds can effectively improve your complexion, slow down your aging process, help improve your blood profile by reducing your LDL, build a strong immune system, prevent the onset of high blood pressure and protect you from other diseases like ADHD, asthma and osteoporosis. They can also help speed up your metabolism, and work well in weight control. A wonderful natural sweetness and impressive variety of nutrients makes almonds one of nature’s most perfect foods.
Here’s a little background on Rickaroons, the amazing company behind these treats
This is Grant’s story about his dad and the start of Rickaroons:
“It started with love - the love for a woman and the love of a healthy life.
I was just a kid when my dad, Rick, created the first version of Rickaroons. He made them to comfort and support the woman he loved and cared for during her battle with Multiple Sclerosis. Although I was young, I still realized that Rickaroons represented his love for a strong woman and a healthy lifestyle.
Over the years my dad then crafted his nutrient-dense dessert into the perfect fuel.
The final product is what we now call the Rickaroon. It is the all-of-the-above cookie: gluten free, vegan, organic, Paleo, soy free, and most importantly - tastes like heaven. The coconut and almond butter not only taste great together, but yield a nice, slow-burning fuel for your body. We eat them in the Rickaroons office first thing in the morning before a swim, as a mid-day snack to stay energized, and as a reward for a good, hard day's work.”
is the son of Rick(aroons) and current co-owner. When not lobbying to change the name of the company to “Grantaroons”, he can be found playing water polo, surfing, lifeguarding on beaches in San Diego, and trying his best. Grant is married to his best friend Claire, a woman given life by Zeus who runs our favorite San Diego non-profit STAR/PAL. They live in San Diego with their two Baja rescue pups and between the two, can recommend a book and podcast to anyone. Grant is the host with the mostest in the family, so you will always find him with at least one other friend, and if not, chances are he’s actively looking for someone he can talk to. He’s always down for hill sprints, garage workouts, Sunday pancakes, coffee + acaí bowl meet ups, surf trips and really any human interaction.
