Eating these crackers I just got a serious flashback to the 1980s and those "garden veggie" crackers from holiday parties at Grandma's. Yep, those were my favorite. But they are full of such weird ingredients, bad oils, and who knows what else. Now, from Simple Mills, I can have my veggie crackers and eat them, too: Rosemary & Sea Salt Almond Flour Crackers have the simple combination that brings back all those memories of Midwestern hors d'oeuvres: olives, pickles, and cheese & cracker assortments. Aside from toasted nuts and bacon cooked to within an inch of its life, there isn't much truly in the crispy/crunchy realm in paleo-friendly foods. Raw veggies don't count, sorry. They're a different kind of crunchy than the kind we crave when presented with guacamole or salsa or a nice spread of pâté. 

We want something rich, buttery, decadent. We want CRACKERS. Simple Mills has provided me, and you, and all of us, with genuinely delicious crackers. Not like those weird round rice ones (you know what I mean, all super-crisp but not satisfying), and not lacking in flavor like many of the GF varieties on the market.

These ingredients are spot-on: almond flour, flaxseed flour, sunflower seed flour, and some mellowing flours like tapioca and cassava. A hit of rosemary for that super-garden flavor punch that seems to mimic an entire spread of veggies with just one herb. Finally, salt. Nothing that isn't needed. Nothing that isn't tasty.

This is the winningest flavor: Rosemary & Sea Salt Almond Flour. To me, they taste just like a cracker should: crispy but rich, crunchy but melt-on-your-tongue. There's no extra weird flavors to get in the way of the simple goodness here. Sure, topping them with anything that strikes your fancy is an option. One day, I'll get there. First, I need to finish this next cracker. And the next.

Cassava flour comes from the cassava root which is a woody shrub that originates and thrives in warm environments close to the equator. After growing for about a year and a half, cassava is ready to be harvested. Our cassava is ground so that it mimics the texture and particle size of glutinous flours, making it an ideal gluten-free alternative ingredient to use in baked goods!

Cassava is rich in minerals such as potassium, iron, manganese, phosphorus and calcium. Cassava is also a complex carbohydrate which are known to help fuel a work out or keep you fuller for longer. The high amounts of fiber in cassava helps to reduce cholesterol, which helps to keep our hearts healthy! As one of the most drought tolerant crops, cassava has helped provide basic diets for over half a billion people throughout the world.
