Sometimes I am green with envy when I see people posting pictures on their exotic, tropical vacations. My favorite part about being on vacation is definitely the food. For me, food is a celebration of cultures and cuisines. So, when my friends decided to book a trip to South America without me, I did the next best thing—fired up the grill, cooked some steaks, and cracked open one of my favorite, Argentinian-derived ingredients: the very green chimichurri sauce. Notice how I say crack open rather than lug out my food processor, run back to the market, and wait a few hours for all of the flavors to meld. What's the deal with chimichurri sauce, anyway? It all started in Argentina a few centuries ago. The Argentine Cowboys, better known as Gauchos, exclaimed "Where's the Beef?" as Spain began importing cattle. Red meat soon became the main source of protein for all of Argentina. These cowboys recognized that their meat needed flavor. They took to their roots and created a sun-dried herb
spice blend, combining parsley, spices, and oils. Sounds cool, right! What's with the name? The etymology of chimichurri sauce is a bit mixed... just like the sauce! History's best bet is that the word chimichurri stems from the Basque word tximitxurri, which more or less means "a mix of things." History aside, we're grateful for Gauchos bringing us this tasty sauce.
